White Sauce
1/3 c flour
1/3 c melted butter
3 c milk
1 tsp salt
pinch nutmeg
Lasagna
1 c finely chopped carrots
1 pkg frozen spinach, thawed and drained
1 pkg frozen broccoli, thawed and drained
1 small onion finely chopped
1 clove garlic minced
1 c Parmesan cheese
2 c mozzarella cheese
2 cloves garlic minced
1 egg
1 pkg lasagna noodles
Recipe
The sauce is a light white sauce. Make a roux with about 1/3 cup flour and 1/3 cup melted butter. Add three cups of milk, 1 tsp salt, and a pinch of nutmeg. Stir constantly til thickened over a medium flame.
Mix the veggies with 1/2 cup Parmesan cheese, 2 cups mozzarella cheese, 2 cloves minced garlic, and 1 egg. Mix together well.
Put a small amount of the sauce on the bottom of the pan, followed by a layer of noodles, veggie mix, sauce, repeat til you've used it all up. Top with buttered bread crumbs and bake at 400 covered til bubbly, 45-60 minutes, depending on the pan you use. Remove cover and allow to brown for about ten minutes. Remove from oven and let it rest for at least 20 minutes. before cutting and serving.
This recipe is for using cooked noodles, but you can use uncooked noodles by adding 3/4 cup more milk to the sauce.
