Old Fashioned Scalloped Potatoes For 2

12 ounces potato -- (2 cups)
1/4 cup onion -- Thinly sliced and halved
1 1/2 tablespoons flour, all-purpose
1 1/2 tablespoons fresh parsley -- finely minced
dash salt and pepper
dash paprika
dash nutmeg
7 ounces whole milk or half and half
2 tablespoons butter
Recipe
Preheat oven to 325°. Scrub potatoes. Peel if desired, cut into thin slices. Spray a 1 quart shallow baking dish with Pam. Layer 1/3 of potatoes into dish, top with onion, and 1/3 of parsley. Sprinkle with paprika, salt, nutmeg and pepper. Top with 1/2 tablespoon of flour sprinkled evenly over. Repeat layers. Top with remaining 1/3 potatoes and parsley. Sprinkle with seasonings and remaining flour. Heat milk and butter in microwave in 2 cup measure about 2 minutes. Pour milk carefully over top. Bake, covered about 1 hour. at 325°. Check doneness of potatoes. If a fork goes all the way through, turn off oven and let set, uncovered, about 10 minutes.
This is a side dish for 3-4. Good with baked ham or pork.
