    Smoky Lime Sweet Potatoes

    Cut 3 large sweet potaotes in 1/2 inch cube pieces. Place in medium saucepan, add water to cover. Bring to boil, reduce heat, cover and cook for 15 minutes or until tender. Reserve 1/3 cup cooking liquid. Drain potatoes, return to pan and mash with the reserved cooking liquid. Add 4 Tbs butter, 1 1/2 tsp lime juice, 2 tsp chopped canned chipolte peppers in adobo sauce, 1 1/2 tsp adobo sauce from can, 1 tsp cumin, 1 tsp grated lime zest, 1/4 tsp salt and 1/8 tsp pepper.
