    List of Ingredients




    4 boneless skinless chicken breasts
    5 slices thick-cut bacon , diced
    1/2 medium onions , minced
    1 (8 ounces) can tomato sauce
    1/2 cup dark rum
    1/2 lemons, juice of
    1/3 cup brown sugar
    2 teaspoons chili sauce (I like Homade or my own)
    1/2-1 teaspoon salt
    1/2 teaspoon coarse-grind pepper

    Recipe



    1. In a medium saucepan, cook bacon until it's lightly browned and some fat is rendered.
    2. Add minced onion and cook until onion is well-browned.
    3. Stir in tomato sauce and rum; simmer over low heat for 30 minutes, stirring occasionally.
    4. Mix in lemon juice, brown sugar, chili sauce, salt and pepper.
    5. Simmer another 15 minutes.
    6. Fire up the grill; brush chicken breasts with a little olive oil, if desired.
    7. Cook, basting with sauce during last 10 or 15 minutes of chicken grilling time.

    4 servings
    1 hours 35 minutes ( 20 mins prep time, 1 hours 15 mins cook time )
