    List of Ingredients


    • 1/2 lb dry red beans, soaked overnight and drained
    • To pot with beans add:
    • 1/2 lb chopped smoked ham
    • 1 lg yellow onion, chopped
    • 3 stalks celery, chopped
    • 1/2 green pepper, chopped
    • 1 tbs chopped parsley
    • 2 bay leaves, broken-up
    • 2 cloves garlic, crushed


    Instructions


    1. Cover with water, barely and simmer uncovered for 2 hours.
    2. Add:
      1/8 lb margerine
      pepper to taste
      1 tbs worstechire sauce
      1 tbs Tabasco sauce
    3. Cook 1 hour more and serve over white rice.
