Red Beans and Rice

List of Ingredients
- 1/2 lb dry red beans, soaked overnight and drained
- To pot with beans add:
- 1/2 lb chopped smoked ham
- 1 lg yellow onion, chopped
- 3 stalks celery, chopped
- 1/2 green pepper, chopped
- 1 tbs chopped parsley
- 2 bay leaves, broken-up
- 2 cloves garlic, crushed
Instructions
- Cover with water, barely and simmer uncovered for 2 hours.
- Add:
1/8 lb margerine
pepper to taste
1 tbs worstechire sauce
1 tbs Tabasco sauce
- Cook 1 hour more and serve over white rice.
