Spanish Rice with Beef

4 c cooked rice
1 14.5 oz can petite diced tomatoes, drained
1/2 lb ground beef
1 med onion, diced
1 med zucchini, diced, about 1 cup
1 tsp salt
1 c shredded cheddar cheeseRecipe
Preheat oven to 350 degrees. Cook the rice according to package directions. While the rice is cooking, crown the ground beef and onion, drain if necessary. In a large mixing bowl, combine the rice, ground beef mixture, salt and tomatoes. Mix well. Stir in zucchini. Pour into 2 qt casserole. Sprinkle the cheese over the top. Bake 20 minutes or until the cheese is melted and bubbly.
