    Aunt Peggy Spinach Salad

    List of Ingredients




    6 tbls olice oil
    1/4 c chopped prosciutto
    2 cloves garlic, minced
    6 tbls dry white wine
    6 tbls lemon juice
    2 tbls brown sugar

    1 bag baby spinach
    2 1/2 sliced mushrooms
    1/2 c toasted chopped pecans
    1/2 c dried cranberries
    1/2 c grated parmesan cheese

    Recipe



    Heat olive oil in skillet over medium heat. Add prosciutto and garlic and saute for 3 minutes. Add wine, lemon juice, sugar and simmer for 5 minutes. Cool and add salt and pepper to tast.

    Combine spinach, mushrooms, nuts, cranberried and cheese in large salad bowl. Toss with dressing.
