Bow Tie Chicken Pasta Salad

Recipe Introduction
Needs to marinate overnight
List of Ingredients
- 3/4 cup olive oil
- 6 Tbs tarragon vinegar
- 1 tsp salt
- 3/4 tsp Tobasco
- 6 Tbs sugar
- 1/2 tsp dried thyme
- 4 cloves garlic, peeled and soaked in the dressing and then removed.
- Salad
- 1/2 lb bow tie pasta, cooked
- 1/2 cup frozen baby frozen peas
- 1 cup grape tomatoes
- 2 cups cooked, shredded chicken breasts
- 1/2 cup toasted pine nuts or pecans
- 1/3 cup fresh basil leaves, chopped
Instructions
- Make dressing the day before serving.
- Marinate chicken, pasta and peeled garlic cloves in dressing overnight.
- Add remaining salad ingredients just before serving.
Final Comments
I generally cut this recipe in half.
