Chicken and Wild Rice Soup

4 cups chicken stock
2 cups water
2 cooked, boneless chicken breasts, shredded
1 pkg Quick cooking long grain & wild rice
1/2 tsp salt
1/2 tsp pepper
3/4 cup flour
1/2 cup (1 stick) butter
2 cups cream (I used Half & Half)
Recipe
In large pot over medium heat, combine broth, water and chicken. Bring just to a boil. Stir in rice, reserving seasoning packet. Cover and remove from heat.
In a small bowl, combine salt, pepper and flour. In a medium saucepan, over medium heat, melt butter. Stir in seasoning packet from rice mix until bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux (a thick butter and flour mixture). Whisk in cream, a little at a time, until all of the cream is fully incorporated and mixture is smooth. Cook until thickened, about 5 minutes.
Stir cream, flour mixture into broth-rice mixture. Cook over medium heat until heated through, about 10-15 minutes.
If making ahead of time, may need to add addition milk to thin when soup is reheated.
