    Rich and easy but very good


    List of Ingredients


    • 2 large baking potatoes
    • 5 1/3 Tbs. butter
    • 1/3 cup flour
    • 3 cups milk
    • salt and pepper
    • 2-3 green onions, chopped
    • 1 cup crumbled bacon (approximately 3/4 lb)
    • 1 cup sour cream
    • 1/3 cup shredded cheddar cheese


    Instructions


    1. Preheat oven to 400 degrees. Bake potatoes until they are tender (approx 50 minutes).
    2. Melt butter in large aucepan. Slowly blend in the flour with a whisk until thoroughly blended. Gradually add the milk, whisking constantly. Add salt and pepper to taste, cook over low heat, stirring constantly.
    3. Cut potatoes in half and scoop out the potato meat. Chop the skin of one potato into small pieces.
    4. When the milk mixture is very warm, whisk in the potatoes and skin. Add the green onions. Whisk well adding the sour cream and bacon. Heat thoroughly. Add the cheese a little at time until melted.


    Final Comments


    I forgot to add the sour cream and didn't miss it at all.
