    List of Ingredients


    • 1 1/2 - 2 lbs chuck roast cut into small pieces
    • 1 cup chopped onion
    • 1 tsp minced garlic
    • 1/2 cups eachdiced carrots and celery
    • 2-3 cups frozen vegtables (green beans, corn, peas and lima beans)
    • 1 can 14.5 oz diced or crushed tomatoes
    • 2 qts beef broth
    • 2 cans V8 juice
    • 2 cups water
    • 1/2 tsp thyme and garlic powder
    • salt and pepper
    • 1 cup diced potatoes
    • 1/2 cup barley


    Instructions


    1. In large stockpot brown meat with onion, garlic, celery and carrots in extra virgin olive oil.
    2. Add all ingredients through the salt and pepper. Bring to a boil, lower and simmer partially covered for several hours.
    3. Add potatos and barley. Return to boil. lower to simmer and cover partially. Cook another 30 minutes or until potato is tender.
