List of Ingredients
- 1 1/2 - 2 lbs chuck roast cut into small pieces
- 1 cup chopped onion
- 1 tsp minced garlic
- 1/2 cups eachdiced carrots and celery
- 2-3 cups frozen vegtables (green beans, corn, peas and lima beans)
- 1 can 14.5 oz diced or crushed tomatoes
- 2 qts beef broth
- 2 cans V8 juice
- 2 cups water
- 1/2 tsp thyme and garlic powder
- salt and pepper
- 1 cup diced potatoes
- 1/2 cup barley
Instructions
- In large stockpot brown meat with onion, garlic, celery and carrots in extra virgin olive oil.
- Add all ingredients through the salt and pepper. Bring to a boil, lower and simmer partially covered for several hours.
- Add potatos and barley. Return to boil. lower to simmer and cover partially. Cook another 30 minutes or until potato is tender.
