yummy gluten-free cinnamon rolls

List of Ingredients
- 2Tbs Butter
- 1/4C Turbinado sugar (or plain old white sugar)
- 2/3C Goat milk (or cow), room temp
- 1 packet of yeast
- 1 egg, room temp
- 1/4C coconut oil (or canola)
- 1/2C Potato starch
- 1C Arrowroot
- 1/4tsp Baking Soda
- 2 1/2tsp Xantham gum
- 2tsp Baking powder
- 1/2tsp fine sea salt (or kosher)
- 1tsp Vanilla extract
- 1/2tsp Almond extract (optional)
- FILLING:
- 2/3C brown sugar
- 1 1/2tsp Cinnamon
Instructions
- Preheat oven to 375
- Add yeast to milk. Wisk until smooth. Cover and let sit for 10-15 min
- Combine butter and sugar until smooth. Add milk/yeast mixture. Add remaining ingredients (except filling). mix until all lumps are removed. (the dough will be soft, don't worry)
- Place dough on wax paper covered in cinnamon sugar (or just sugar). Using rubber scraper, spread/flatten dough into about an 11x13 rectangle.
- Mix filling ingredients and spread onto dough, leaving about an inch around three edges.
- carefully roll the dough into a cylinder. Slice into about 8 pieces, and place in round baking dish.
- Bake for 20 minutes (dough may be refrigerated overnight before baking if you want less work in the morning).
Final Comments
The original recipe came with a glaze and had more sugar in it. But I think these ooey gooey rolls are plenty sweet.
