Amy's gluten-free chocolate chunk cookie

Recipe Introduction
mmm...cookies. These are crumble in your mouth yummy. They are best right out of the oven, or right out of the fridge.
List of Ingredients
- 1C Brown rice flour
- 1 1/4C Tapioca flour
- 1tsp Baking soda
- 1tsp Course sea salt (or table salt)
- 1C Butter, softened
- 1/2C Turbinado sugar
- 1/2C Brown sugar
- 1tsp Vanilla extract
- 1/2tsp Almond extract
- 1tsp Cinnamon
- 2 Large eggs, room temp
- 12oz chocolate chunks (or chips)
- 1/4tsp Xantham gum
Instructions
- Preheat oven to 375
- Combine flour, soda, salt, cinnamon, and xantham gum
- In separate bowl, combine sugar, butter, vanilla, almond. Blend until creamy
- Add eggs to sugar mixture, beating well after each egg.
- Gradually beat in flour mixture. Fold in chocolate (you can also add 1C chopped walnuts here)
- drop onto ungreased baking sheet by the spoonful (smaller is better because this is a crumbly cookie).
- Bake for about 10 minutes. Cool for about 5 minutes before transferring to cooling rack.

I made these with my mom's special rendered butter recipe. You'll have to ask her for that recipe ;)
