    My Own Collection

    This is a lighter version of guacamole, but just as tasty. Serve with tortilla chips, put it on a sandwich, and serve with enchiladas. It's great with anything!


    List of Ingredients


    • 1 1/2 cups cooked broccoli stems, tough outer layers peeled off
    • 1 1/2 Tbsp. fresh squeezed lemon juice
    • 1/4 tsp. ground cumin
    • 1/4 tsp. garlic powder
    • 1/2 tomato, diced
    • 1 scallion (green onion), sliced
    • 1-4oz. can green chiles, drained and patted dry


    Instructions


    1. In a food processor, blend the broccoli stems with the lemon juice, cumin and garlic powder until completely smooth. Add the remaining ingredients and mix well by hand, but do do not blend. Chill before serving for best flavor.


    Final Comments


    Yield: 2 cups
