    Smoked Salmon Ramekins

    These make a great appetizer, and it will keep your guests coming back for more.


    List of Ingredients


    • 8 oz. cream cheese, softened
    • 2 cups cool chicken broth
    • 9 oven ready lasagne noodles
    • 6 oz. smoked salmon chunks, finely chopped
    • 2 cups shredded mozzarella cheese


    Instructions


    1. Preheat the oven to 375F. Using an electric mixer, beat the cheese until creamy. Slowly add broth, beating well until smooth.
    2. Lightly grease 6-3"x5" oven proof dishes. Crack the lasagne noodles in halves or pieces.
    3. Put 1 Tbsp. sauce in bottom of each dish, top each with noodles, 1 Tbsp. salmon, 2 Tbsp. of sauce...noodles, sauce then cheese.
    4. Cover each tightly with foil. Bake for 30 minutes. Remove foil. Bake another 10 minutes*.
    5. *If baked in a 9" square dish, add 10 minutes.


    Final Comments


    Yield: 6 servings
