    Salmon is so versatile, and this is one of the tasty ways to "jazz it up"!


    List of Ingredients


    • 2 lbs. salmon fillet (with skin)
    • 2 Tbsp. each vegetable oil, rice vinegar and soy sauce
    • 1 Tbsp. brown sugar
    • 2 Tbsp. minced gingerroot
    • 2 cloves garlic, minced
    • pinch pepper and cayenne pepper


    Instructions


    1. Preheat oven to 450 F.
    2. Make several shallow diagonal slashes in skinless side of salmon. Place, skin side up, in shallow glass dish.
    3. Whisk together oil, rice vinegar, soy sauce, sugar, gingerroot, garlic, pepper and cayenne; pour over salmon. Cover and marinate for 30 minutes.
    4. Discarding marinade, place fillet, skin side down in roasting pan. Roast for calculated time: 10 minutes per inch or until fish flakes easily when tested with fork.
