Crab Mornay

I'm a big fan of cream sauce and seafood, so here's another prime example of one of my passions.
List of Ingredients
- 3 Tbsp. butter
- 4 green onions, chopped
- 1 Tbsp. flour ( you may need more to thicken)
- 1/2 cup milk
- 1/4 cup white wine
- 2 tsp. dijon mustard
- 1 lb. canned red crabmeat, drained (you can use imitation if you like)
- 1/2 cup cream
- TOPPING:
- 4 medium potatoes, peeled and cooked
- dash milk and butter for mashing
- grated cheese, to taste
Instructions
- Melt butter in pan and fry green onions until tender. Add flour and cook for 1 minute, stirring continually. Remove from heat, stir in milk, wine and dijon mustard. Return to heat and bring to a boil, stirring constantly. Add crabmeat and cream.
- Spoon mixture into 6 individual gratin dishes or 1 large baking dish.
- To make the topping, mash cooked potatoes with milk and butter. Spread over crab mixture and sprinkle with grated cheese. Brown under broiler.
- *Variation*-replace with 1 lb. of any seafood, freshly cooked or canned.
