    My Own Personal Collection

    I'm a big fan of cream sauce and seafood, so here's another prime example of one of my passions.


    List of Ingredients


    • 3 Tbsp. butter
    • 4 green onions, chopped
    • 1 Tbsp. flour ( you may need more to thicken)
    • 1/2 cup milk
    • 1/4 cup white wine
    • 2 tsp. dijon mustard
    • 1 lb. canned red crabmeat, drained (you can use imitation if you like)
    • 1/2 cup cream
    • TOPPING:
    • 4 medium potatoes, peeled and cooked
    • dash milk and butter for mashing
    • grated cheese, to taste


    Instructions


    1. Melt butter in pan and fry green onions until tender. Add flour and cook for 1 minute, stirring continually. Remove from heat, stir in milk, wine and dijon mustard. Return to heat and bring to a boil, stirring constantly. Add crabmeat and cream.
    2. Spoon mixture into 6 individual gratin dishes or 1 large baking dish.
    3. To make the topping, mash cooked potatoes with milk and butter. Spread over crab mixture and sprinkle with grated cheese. Brown under broiler.
    4. *Variation*-replace with 1 lb. of any seafood, freshly cooked or canned.


    Final Comments


    Yield: 6 servings
