Seafood Alfredo Provencale

This is beyond good-the medley of pasta, seafood, cheese and a cream sauce-it's simply irrestible.
List of Ingredients
- 4 to 5 scallions, chopped
- 1 Tbsp. butter
- 2 cups rotini pasta, cooked
- 2 cups wide noodles, cooked
- 3 cups fresh spinach
- 3/4 lbs. cleaned shrimp
- 1 lb. frozen cheese tortellini, cooked
- 1 lb. fresh bay scallops, cooked
- 1 jar reduced fat or regular alfredo sauce
- 1 cup shredded monterey jack cheese
Instructions
- Heat oven to 350 F.
- Saute scallions in butter in skillet over medium high heat until softened, about 5 minutes.
- Combine scallions, cooked rotini, noodles and spinach in bowl. Spoon into 4 quart casserole. Layer on shrimp, tortellini and scallops. Pour alfredo sauce over top. Sprinkle with cheese.
- Bake, covered, in 350 F oven for 45 minutes. Uncover, bake for 15 more minutes. Serve with garlic bread.
