    Source of Recipe

    My Own Personal Recipes

These are great to take to work, or to serve for friends at lunch. Very tasty. Also a great way to use up leftovers!

    List of Ingredients

    • 3/4 cup creamy caesar dressing (can be low-fat, if desired)
    • 4 flour tortillas
    • 12 leaves romaine lettuce
    • 2 cups chopped cooked turkey or chicken
    • 17 oz. jar roasted red peppers, drained
    • 1/2 cup grated parmesan cheese

    Instructions

    1. Spread a generous amount of dressing over entire surface of one side of each tortilla.
    2. Place 3 romaine leaves on each tortilla, pressing them into the dressing.
    3. Place turkey and roasted red peppers on one half side of each tortilla. Sprinkle parmesan cheese over all.
    4. Tightly roll up, starting with the turkey side. Wrap each roll in plastic wrap and refrigerate for 1 hour or longer.
    5. Before serving, unwrap and cut each roll in halves, quarters or 1 1/2 inch bite-size pieces.
