Basic White Sauce

This sauce goes with anything, and the variations are great, too!
List of Ingredients
- 3 Tbsp. hard margarine (or butter)
- 1/2 cup finely chopped onion (optional)
- 3 Tbsp. flour
- 2 cups milk (or half-and-half cream)
- 1/4 tsp. salt
- 1/4 tsp. pepper
- 1/4 tsp. ground nutmeg
Instructions
- Melt the margarine in a small saucepan on medium heat. Add the onion and saute for 5 minutes until soft.
- Stir in the flour, making sure it's mixed in well. Cook and stir for 1 to 2 minutes or until bubbling and grainy.
- Gradually whisk in 1/4 cup of the milk until combined. Whisk in the remaining milk, salt and pepper, until the sauce is blended.
- Simmer, uncovered, on low for about 10 minutes, stirring occasionally, until the sauce is thickened. Stir in the nutmeg.
- VARIATIONS: Mornay Sauce-Add 3 Tbsp. Parmesan cheese, 3 Tbsp. grated cheddar cheese, and 1 egg yolk.
Herb-Add 2 Tbsp. each of chopped fresh parsley and basil.
Final Comments
Yield: about 2 1/2 cups
