This is an incredible combination of ingredients with tasty results.
List of Ingredients
- 1 lb. shrimp
- 1 lb. scallops
- 2 Tbsp. butter
- 1 lb. frozen spinach
- 1-14 oz. can coconut milk
- 1 1/2 Tbsp. Thai curry paste
- 2 tsp. fresh lemon juice
Instructions
- In a large pan or good sized pot, melt butter over medium heat.
- Add the shrimp and scallops and saute. Don't cook them, just coat them with the butter for about 1 minute.
- Add the spinach, coconut milk, and spices and stir until everything is well mixed.
- Reduce to low heat and cover the pot.
- Let it simmer for about 5 minutes or until the seafood is cooked (don't overcook).
- Serve in soup bowls. Can also be served over rice.
Final Comments
Yield:4-6 servings (water can be added to extend the servings, and I reccommend it!)
