    This is an old favourite in South Africa, made popular by our Malay communities. Wonderful, rich winter food.

    List of Ingredients




    1 kg shin and/or neck of lamb
    2 medium or large onions finely sliced
    2 tins of Italian tomatoes
    2 cloves of garlic, finely chopped
    3 fair sized potatoes cubed
    a pinch of ground cumin
    a pinch of ground ginger
    small teaspoon of coriander seeds
    3 cloves
    a pinch of nutmeg
    2 teaspoons lemon juice
    1 teaspoon sugar
    salt and plenty of freshly ground black pepper

    Recipe



    Heat a heavy pan and dry fry the coriander seeds at medium heat for a couple of minutes. Crush with a rolling pin.

    Meat should be sliced and kept on the bone.

    Fry onions till lightly coloured and add garlic. Remove from saucepan and fry meat, only enough to cover the bottom of the pan at one time, till browned. Return onion and garlic to saucepan and stir in the spices,tomato and sugar.

    Slowly simmer till the sauce is thick and the meat almost ready to fall from the bone. Add the potatoes and cook through. Taste for seasoning.

    Fresh basil can be added. Then serve with Basmati rice.
