    Hummingbird Cake

    This cake is great for the holidays. It is extremely MOIST!

    List of Ingredients




    1 and 1/2 cup oil
    2 cups sugar
    3 eggs
    1 tsp. vanilla
    3 cups flour
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 cup coconut
    1 8 oz. can crushed pineapple with juice
    1 cup chopped pecans
    2 bananas, diced

    Recipe



    Mix oil, sugar, eggs, vanilla together. DO NOT USE MIXER! Add dry ingredients. Mix well. Add fruit and nuts. Blend well.
    Bake in 3 round greased and floured pans at 350 degrees for 30 minutes.
    May also be baked in a 9x13 pan. Bake slightly longer.

    Top with Cream Cheese frosting.

    1 8 oz. pkg. cream cheese
    1/2 cup butter
    1 16 oz. box powdered sugar
    1 tsp. vanilla
    1-2 tablespoons milk.

    Mix well.
