    Creme Brulee

    List of Ingredients




    1 liter whole milk, or 1 liter half and half.
    5 egg yolks
    1 1/2 tblspoons corn starch
    6 tblspoons sugar
    grated rind of 1 lemon and 1 orange
    3 cinnamon sticks.

    Recipe



    This is also called Crema Catalana.


    Put milk or half and half to boil with the grated rinds and cinnamon sticks.

    In a bowl mix the sugar, cornstarch and yolks, and after milk has simmered for a few minutes, let cool a little and add to bowl ,strained, stirring all the while. Then bring again slowly to a boil and simmer until thick, stirring to avoid sticking. Take out of fire and keep stirring until it has cooled enough to not make a skin. It helps to cool putting pot in water.

    Then refrigerate overnight, and before serving sprinkle with powdered sugar and burn it either with a hot iron or with a burner so it caramelizes and forms a caramel surface.

    Serve with cinnamon. It is also wonderful with strawberries.
