    Shrimp Fettuccine

    List of Ingredients


    • 5 green onions, chopped
    • 2 cups sliced mushrooms
    • 2 cloves garlic, minced
    • 1 stick butter
    • 2 Tablespoons oil
    • 3 pounds raw shrimp, peeled
    • 2 teaspoons salt
    • 8 ounces fettuccine pasta
    • 3/4 cup grated Romano cheese
    • 3/4 cup grated Parmesan cheese
    • 1 cup heavy cream or half & half
    • 4 Tablespoons parsley, chopped


    Instructions


    1. Over medium heat, saute onion, mushrooms and garlic in 1/2 stick butter and 2 tbsp. oil. After mushrooms are tender, add shrimp. Saute until pink. Season with salt. Cover and keep warm.

    2. Cook pasta in salted, boiling water until done; drain well.

    3. Place remaining butter in pan and add pasta, cheeses and cream. Mix well. Combine with shrimp mixture.

    4. Sprinkle chopped parsley over top.
