Shrimp Bisque--2 Gallon

List of Ingredients
- 12 oz. butter
- 12 oz. flour
- 8 oz. shrimp base
- 2 tsp. paprika
- 5-1/2 qt. hot water
- 1-1/2 qt. Half & Half
- 6 oz. white wine (Chardonnay)
- 32 oz. cooked shrimp, cut into small pieces
Instructions
- Melt butter over low heat. Blend in flour. Add paprika. Beat with wire whisk. Stir over low heat 2 - 3 minutes, until well blended.
- Remove from heat. Add shrimp base and hot water, mixing well. Heat to boiling, stirring constantly. Reduce heat and simmer slowly for 10 minutes.
- Add Half & Half, wine and cooked shrimp; mix well. Heat until hot but DO NOT BOIL.
- Hold over hot water. Serve garnished with chopped fresh parsley or dried.
