Maggie's Americanized Minestrone

This is a soup that even veggie haters, such as young children, like to eat. A friend whose veggie list is only potatoes and corn eats 3-4 helpings of this soup!
List of Ingredients
- 1 lb. ground beef
- 1 chopped onion/1-2 tsp. onion powder
- 2-3 cloves minced garlic/1-2 tsp. garlic powder
- 1 beef boullion cube
- 1 1/2 c. water
- 16-20 oz. bag frozen mixed vegetables
- 29 oz. jar spaghetti sauce
- 1/2 c. salad macaroni
- 16 oz. can kidney beans, undrained
- 1 tsp. Italian seasoning, opt.
Instructions
- In Dutch oven, brown beef with onion and garlic. Add remaining ingredients and simmer for about 1 hour, covered, or until vegetables are done.
- The amount of vegetables and seasoning is up to your personal taste. A very quick soup can be made using 3 cans of canned mixed vegetables, using the liquid in the can for the water.
- CROCKPOT: Brown beef and place in crockpot. Add remaining ingredients. Cook on low 7-9 hours or high 3-5 hours.
Final Comments
I personally prefer this made in the crockpot. The flavors meld so nicely! And it is worry free.
