Spinach Casserole

1 pkg Jiffy Corn Muffin Mix
2 eggs
1 cup sour cream
2 cups chopped onion
1 can cream of chicken
2 tbsp butter
10 oz chopped spinach
pepper
garlic powder or salt
6 slices swiss cheese
Recipe
Preheat over to 350.
Boil spinach, drain and set aside. Sautee onions in butter then mix with spinach. In a large bowl beat 2 eggs, mix in Jiffy, sour cream, cream of chicken, seasonings and spinach/onion mix then stir well until smooth. Spray large casserole dish with non-stick spray. Pour it in, bake for 30-40 minutes, take out and top with cheese and allow to bake 3-5 more minutes. Allow to set 10 minutes before eating.
