Chicken Chili Quesadillas

2 large cans (10 ounces each) white meat chicken
2 TBSP chili powder
2 tsp bottled minced garlic
cooking oil spray
12 large (10 inch) flour tortillas
2 cups (one 8 ounce package) already shredded mexican blend cheese
reduced fat sour cream, for serving (optional)
bottled mild salsa, for serving (optional)
Recipe
1. The oven should be already heated to 450F.
2. Place the chicken, undrained, with the chili powder and garlic in a microwave-safe casserole that has a lid, and microwave, covered, on high, for 5 minutes.
3. Meanwhile, spray 2 baking sheets with cooking oil spray and arrange 3 of the flour tortillas on each sheet. When the chicken mixture is ready, spread it over the tortillas, dividing evenly. Sprinkle with the cheee. Top with the remaining tortillas and press lightly with your hands so they adhere. Bake until the tortillas are crisp and the cheese is melted, 5-7 minutes.
4. Cut each carefully into quarters, using a sharp serrated knife. Serve accompanied by sour cream and salsa, if desired.
