Spinach and Cheese Quiche

- 1 prepared 9" pie shell
- 1 tablespoon butter
- 1 package (10 oz) fresh baby spinach, washed
- 1 cup half-and-half
- 3 eggs
- 1 cup (4 oz) shredded Swiss cheese
- 1/2 cup (2 oz) Havarti or other white cheese, cubed
Instructions
- Pierce sides and bottom of pie crust with fork. Bake 10 minutes.
- Melt butter in large skillet and add spinach. Cover, place on medium-high heat and steam until spinach is wilted, 3-4 minutes. Meanwhile, whisk cream and eggs.
- Layer half of the Swiss cheese, half the spinach, the Havarti cheese and the remaining spinach and Swiss cheese in the pie crust. Pour the egg mixture on top.
- Bake quiche until the filling is set, 40-50 minutes. Remove from the oven and cool for 5-8 minutes on wire rack before cutting.
