Vegetable Chowder

This is a favorite of mine.
List of Ingredients
- 3 cups cubed potatoes
- 1 cup diced carrots
- 1 can corn, drained (15 oz)
- 1 box frozen chopped spinach
- 2 cups vegetable broth
- 1 cup chopped onion
Instructions
- Saute onion in a bit of oil or in a Pam sprayed pan. Add broth and veggies. Simmer, covered for 15 minutes or until vegetables are tender. Eat OR.........
- Whisk 4 cups milk, 6 tbsp flour and 1/2 tsp salt to blend. Add to pot; boil stirring gently until slightly thickened. Add 1 1/2 cups shredded cheddar cheese.
(instead of the cheese you could add.. 1 (14 oz) can salmon drained and broken up OR 2 cans (6 1/2 oz each) minced clams!
