    White Cheddar Shrimp Frittata

    6 eggs
    1/2 cup heavy cream
    1/2 stick Tillamook® butter
    1/2 pound bay shrimp
    1 tomato, diced
    3 cloves garlic, sliced
    1 cup Tillamook® White Cheddar cheese, shredded
    2 tablespoons lemon juice
    2 tablespoons dried parsley
    1 tablespoon dried thyme
    zest of 1 lemon
    salt to taste
    pepper to taste


    Mix together egg and cream well. Cook shrimp in butter over medium heat. Add lemon zest and juice. Add garlic. When garlic begins to give off aroma, add parsley, thyme, pepper, and salt. Add tomato and egg mixture, and stir in the pan, occasionally scraping the sides until the eggs begin to set, but are still runny. Add Tillamook® White Cheddar Cheese, and place pan in a 300 degree oven until firm and cheese is completely melted. Gently remove from the pan onto a large plate, making sure to keep its form intact, and let rest. Slice into quarters and serve.

    Serves 4
