8 eggs
3 Tbsp milk
1 Tbsp finely chopped red onion
1/2 tsp salt, or to taste
1/4 tsp pepper, or to taste
2 Tbsp butter
1 large clove garlic, minced
3 oz crumbled blue cheese
3 Tbsp chopped fresh basil
Recipe
In a large bowl beat eggs, milk, salt & pepper until blended. Heat a large skillet or omelet pan over medium-high heat. Add butter & garlic &stir until butter has melted. Pour in egg mixture & cook until omelet is almost set, but still moist & creamy on top. As eggs set lift cooked portion around edges of the pan to allow uncooked eggs to flow underneath. Gently shake pan to keep omelet from sticking. Sprinkle top with cheese & basil continue to cook until cheese is melted then fold omelet in half & slide onto plate.
SERVINGS: 4 TIME: 25 minutes
SERVING TIPS: Great with fresh fruit & sour cream.
