Gourmet Sun-Dried Tomato Butter

1 cup Butter, softened
1 tablespooon finely chopped green onion
1 teaspoon finely chopped fresh garlic
2 tablespoons finely chopped sun-dried tomatoes, soaked, drained
Melt 1 tablespooon butter in 8-inch skillet; stir in onion and garlic. Cook over medium heat, stirring constantly, until onion is softened (1/2 to 1 minute). Remove from heat; cool 5 minutes.
Meanwhile, beat remaining butter in small mixer bowl at medium speed until creamy (1 to 2 minutes). Reduce speed to low; add onion, garlic and sun-dried tomatoes. Continue beating until well mixed (1 to 2 minutes).
Cover; refrigerate at least 1 hour to enhance flavors. Store in airtight container up to 2 weeks.
Makes 1 cup.
This butter is great on bread or use it on pasta, veggies and meat.
