Grilled Trout with Walnut Butter Sauce
Makes 4 servings
Ingredients
Walnut Butter Sauce (recipe follows)
4 whole, cleaned trout or other small whole fish, about 12 ounces each
Prepare Walnut Butter Sauce. Place fish on well-oiled grill rack or in well-oiled wire grill basket positioned on grill rack, over medium-hot KINGSFORD� with Mesquite Charcoal Briquets. Grill 13 to 15 minutes, turning after 6 minutes or until fish flakes easily when tested with fork. Serve trout topped with Walnut Butter Sauce.
Walnut Butter Sauce
Makes about 3/4 cup
Ingredients
1/2 cup butter, divided
1/2 cup chopped walnuts
3 tablespoons Madeira wine
Heat 2 tablespoons butter in large skillet over medium heat until butter is melted. Add walnuts; cook and stir until walnuts are golden and fragrant. Reduce heat to low. Add remaining 6 tablespoons butter; stir until melted. Stir in Madeira. Serve warm.
