Halibut with Roasted Pepper Sauce
Makes 4 servings
Ingredients
Roasted Pepper Sauce (recipe follows)
1 medium onion, thinly sliced
1 large clove garlic, minced
1 (1-1/2-pound) halibut fillet, skinned
1. Preheat oven to 425°F. Grease shallow baking dish.
2. Prepare Roasted Pepper Sauce; set aside.
3. Cover bottom of baking dish with onion and garlic. Top with fish and sauce.
4. Bake 20 minutes or until fish flakes easily when tested with fork. Garnish as desired.
Roasted Pepper Sauce
Ingredients
1 (7-ounce) can chopped green chilies, drained
1 (7-ounce) jar roasted red peppers, drained
2/3 cup chicken broth
Combine ingredients in food processor or blender; process until smooth.
