    Tuna-Stuffed Sole with Lime Sauce
    Makes 4 servings

    Ingredients
    1/2 cup carrots, cut into thin strips
    1/2 cup zucchini or yellow squash, cut into thin strips
    2 green onions, cut into thin strips
    1 (7-ounce) STARKIST Flavor Fresh Pouch® Tuna (Albacore or Chunk Light)
    2 tablespoons lemon juice
    1 teaspoon dried basil leaves
    1/2 teaspoon dried dill weed
    8 thin sole or other white fish fillets (about 1-1/2 pounds)
    16 large fresh spinach leaves, washed
    Lime Sauce
    1/2 cup chicken broth
    2 tablespoons butter or margarine
    2 tablespoons lime juice
    1 tablespoon cornstarch
    1/4 teaspoon black pepper
    Lemon or lime peel for garnish (optional)



    Prep Time 15 minutes




    In 1-quart microwavable bowl, combine carrots, zucchini and onions. Cover with waxed paper; microwave at HIGH 2 to 3 minutes or until nearly tender, stirring once during cooking. Stir in tuna, lemon juice, basil and dill. Arrange one sole fillet on microwavable roasting rack or plate. Top with two spinach leaves, overlapping if necessary. Spoon equal portion of vegetable mixture over each fillet; roll up each fillet from short side, enclosing filling. Secure with wooden toothpicks; transfer to shallow microwavable dish, filling sides up. Repeat with remaining fillets and filling.

    Cover dish with vented plastic wrap. Microwave at HIGH 8 to 11 minutes, or until fish flakes easily, rotating dish once during cooking. Remove wooden toothpicks. Let stand while making Lime Sauce.

    For Lime Sauce, in medium microwavable bowl, combine all sauce ingredients except garnish until well blended. Microwave, covered, at HIGH 1 to 3 minutes, or until thickened, stirring once. Serve fish with sauce. Garnish, if desired.
