Wasabi Salmon
Makes 4 servings
Ingredients
2 tablespoons soy sauce
1-1/2 teaspoons wasabi paste or wasabi prepared from powder, divided, plus more to taste
4 salmon fillets (6 ounces each), with skin
1/4 cup mayonnaise
1. Preheat broiler. Combine soy sauce and 1/2 teaspoon wasabi paste; mix well. Spoon mixture over salmon. Place salmon, skin sides down, on grid over medium coals or on rack of broiler pan. Grill or broil 4 to 5 inches from heat source 8 minutes or until salmon is opaque in center.
2. Meanwhile, combine mayonnaise and remaining 1 teaspoon wasabi paste; mix well. Taste and add more wasabi, if desired. Transfer salmon to serving plates; top with mayonnaise mixture.
Tip Wasabi comes from the root of an Asian plant. It is sometimes referred to as Japanese horseradish. It has a fiery flavor.
