Arroz con Pollo
Makes 6 servings
Ingredients
1 (3-pound) broiler-fryer chicken, cut up
1/2 teaspoon ground cumin
1 tablespoon vegetable oil
1 can (14-1/2 ounces) DEL MONTE® Stewed Tomatoes - Seasoned with Garlic, Jalapenos, & Mexican Spices
1 cup uncooked long grain white rice
1 can (14 ounces) chicken broth
1 large onion, thinly sliced
2 cloves garlic, minced
1 to 1-1/2 teaspoons minced jalapeño pepper
Prep and Cook Time 45 minutes
1. Sprinkle chicken with cumin. Season with salt and pepper, if desired.
2. Brown chicken in oil in 4-quart heavy saucepan over medium-high heat; drain. Drain tomatoes reserving 1/3 cup liquid.
3. Add reserved liquid, tomatoes and remaining ingredients to saucepan.
4. Cover and cook over low heat about 30 minutes or until chicken is no longer pink and rice is tender.
