Barbecued Caribou Ribs

3 pounds caribou ribs, cut in pieces
1 cup ketchup
2 tbsp. vinegar
2 tbsp. brown sugar
1 tsp. salt
1/4 pound salt pork, diced
1 tbsp. prepared mustard
2 tbsp. lemon juice
1 onion, chopped
1/4 tsp. pepper
Brown ribs in salt pork. Place in casserole and cover with remaining ingredients, which have been combined. Bake at 325F for 2-1/2 hours. Baste sauce over ribs frequently.
Delicious served with rice.
