    2 pork tenderloins
    2 tbsp butter & oil
    salt & pepper to taste
    1/2 cup celery
    1/2 cup sliced carrots
    1 onion, sliced
    1/2 lb fresh mushrooms, sliced
    1/4 cup white wine
    1 cup chicken stock
    2 tbsp flour
    noodles
    parsley

    Brown the tenderloins on all sides in a skillet with 1 tbsp. of the butter and oil. Season to taste with salt and pepper and remove from pan. Add the remaining 1 tbsp. butter and oil and sauté the celery, carrots, onions and mushrooms. After 5 minutes add the wine and cook another minute. Then add the chicken stock which has been mixed with the flour and cook just until the mixture thickens. Place the tenderloins in a baking dish, cover with the vegetable mixture, cover and bake at 325° F. about 1 1/2 hours. Slice the tenderloin and serve over noodles with the veggies and sauce. Garnish with parsley sprinkled over the top of the sauce.
