Zesty Island Chicken Kabobs
Makes 2 servings
Ingredients
2 boneless, skinless chicken breasts (about 8 ounces)
1 small orange, cut into wedges
3/4 cup fresh or canned pineapple chunks
1/2 red bell pepper, cut into 1-inch pieces
1/2 green bell pepper, cut into 1-inch pieces
1/3 cup teriyaki sauce, divided
1 (2-cup) bag UNCLE BEN'S® Boil-in-Bag Rice
1. Cut chicken into 1-inch pieces. Thread chicken, orange, pineapple, red bell and green bell peppers alternately onto four 10-inch skewers. Brush some of teriyaki sauce over kabobs. Grill or broil kabobs 10 to 15 minutes or until chicken is no longer pink, turning once and brushing occasionally with remaining teriyaki sauce.
2. Meanwhile, prepare rice according to package directions. Serve kabobs over rice.
Serving Suggestion For a tropical touch, serve rice in a pineapple shell and top with kabobs.
