    "Ordinary macaroni and Velveeta cheese becomes extra special by the addition of a white sauce made with cream cheese and prepared mustard."
    • 1 1/2 cups uncooked elbow macaroni
    • 1 pound Velveeta cheese, cubed
    • 2 Tbsp. butter
    • 2 Tbsp. flour
    • 2 cups milk
    • 2 Tbsp. prepared mustard (yellow or dijon)
    • 8 oz. cream cheese, cubed and softened
    • Salt and pepper, to taste
    • 2 Tbsp. dried parsley flakes
    • Buttered fine dry bread crumbs or crushed croutons (optional)


    Preheat oven to 350. In a large saucepan, cook macaroni according to package directions; drain and add Velveeta cheese. Stir well and set aside. In medium saucepan, melt butter, add flour and stir well. Add milk, mustard, cream cheese, salt and pepper. Cook and stir until cream cheese is melted. Add parsley and combine with macaroni mixture. Pour into large casserole. Top with breadcrumbs or crushed croutons, if desired. Bake for 30 - 45 minutes, or until top is a light golden brown.
