Cook's Notes Gorgonzola is one of Italy's great cheeses. It has an ivory-colored interior that is streaked with bluish-green veins. Gorgonzola is made from cow's milk and has a creamy savory flavor. It can be found cut into wedges and wrapped in foil in most supermarkets.
