Marinated Spam Vegetable Salad

1 (12-ounce) can Spam , cut into strips
1 pound broccoli, broken into florets
1 head cauliflower, broken into florets
2 cups cooked rotini
1 cup sliced mushrooms
1 cup chopped celery
1 onion, chopped
1/2 cup chopped red bell pepper
1-1/2 cups Extra Virgin Olive Oil
1 cup sugar
1/2 cup vinegar
1/4 cup chopped fresh parsley
2 teaspoons dry mustard
Recipe
In large skillet over medium heat, saut� Spam until lightly browned. In large bowl, combine Spam, broccoli, cauliflower, rotini, mushrooms, celery, onion and bell pepper. In small bowl, combine oil, sugar, vinegar, parsley and dry mustard; mix well. Toss dressing with SPAM� mixture. Cover and refrigerate 4 hours or overnight.12 servings
