Fresh Fruit with Creamy Lime Dipping Sauce
Makes 12 servings
Ingredients
2 tablespoons lime juice
1 small jicama, peeled and cut into 1/2-inch-thick strips 3 to 4 inches long
2 pounds watermelon, rind removed, and fruit cut into 1/2-inch-thick wedges 2 to 3 inches wide
1/2 small pineapple, peeled, halved lengthwise and cut crosswise into wedges
1 ripe papaya, peeled, seeded and sliced crosswise
Creamy Lime Dipping Sauce (recipe follows)
Combine lime juice and jicama in large bowl; toss. Drain. Arrange jicama, watermelon, pineapple and papaya on large platter. Serve with Creamy Lime Dipping Sauce. Garnish as desired.
Creamy Lime Dipping Sauce
Makes about 1 cup
Ingredients
1 container (6 ounces) vanilla-flavored nonfat yogurt
2 tablespoons minced fresh cilantro
2 tablespoons lime juice
1 tablespoon minced jalapeño pepper*
*Jalapeño peppers can sting and irritate the skin; wear rubber gloves when handling peppers and do not touch eyes. Wash hands after handling.
1. Combine all ingredients in small bowl; mix well to combine.
