Frozen Lemon Squares

Makes 6 to 9 servings
Ingredients
1-1/4 cups graham cracker crumbs
1/4 cup sugar
1/4 cup (1/2 stick) butter or margarine, melted
1 (14-ounce) can EAGLE BRAND® Sweetened Condensed Milk (NOT evaporated milk)
3 egg yolks
1/2 cup lemon juice from concentrate
Yellow food coloring (optional)
Whipped cream or non-dairy whipped topping
1. Preheat oven to 325°F. In small mixing bowl, combine crumbs, sugar and butter; press firmly on bottom of 8- or 9-inch square pan.
2. In small mixing bowl, beat EAGLE BRAND®, egg yolks, lemon juice and food coloring (optional). Pour into crust.
3. Bake 30 minutes. Cool completely. Top with whipped cream. Freeze 4 hours or until firm. Let stand 10 minutes before serving. Garnish as desired. Freeze leftovers.
