Black-Eyed Peas With Ham

3 1/2 cups Black-Eyed Peas
3 cups Chicken Stock or Low-Sodium Chicken Broth
4 oz. Cooked Ham; Finely Chopped
1 Small Yellow Onion; Chopped
2 Tbs. Balsamic Vinegar or Red Wine Vinegar
3 Cloves Garlic; Minced
1 Bay Leaf
1/2 tsp. Dried Thyme
1/4 tsp. Dried Red Pepper; Crushed
Place all ingredients in a large sauce pan and bring to a boil over medium-high heat. Cover and reduce heat to simmer until peas are tender, making sure to stir occasionally. Total preparation time is about 45-minutes. Remove bay leaf from the sauce pan and discard. Season with salt and pepper to taste and serve warm.
