Cajun Shrimp Skewers

A great appetizer OR main dish. Goes well with rice or pasta on the side. Or serve with grilled steak. Kinda' like a "Surf and Turf.

2 lbs. shrmp, uncooked, peeled and devained, tails on
Large reseable plastic bag

~~~~~~ MARINADE ~~~~~~

1 onion, finely chopped
1 cup peanut oil
2 tbsp cajun seasoning (try my link above)
1 tbsp choped garlic
2 tsp. cumin
1 tsp. rosemary
1 tsp. thyme
Wood or metal skewers

~~~~~~ Cajun Butter ~~~~~~
-----------------------------------
1/2 lb. (2 sticks) unsalted butter
1 tsp. basil
1 tsp. tarragon
1 tsp. cajun seasoning
1/2 tsp.garlic powder
2-3 drops tabasco sauce
Recipe
Place shrimp in bag
Combine marinade ingredients, pour over shrimp and refridgerate for 1-2 hours
Preheat grill to "medium" heat
Remove shrimp from marinade and thread on skewers
Grill 5-7 minutes,turning and basting frequently with marinade
Serve hot with Cajun butter
NOTE: If using wood or bamboo skewers, don't forget to soak them so they don't burn.
HINT: I soak a bunch of wood or bamboo skewers overnight then wrap them in plastic wrap and keep them in the freezer for whenever I need some. Wipe them with oil before using and you'll never have a burnt skewer or stuck on food.
