Feta Cheese And Roasted Garlic Vinaigret

6 cloves garlic
White wine vinegar
Feta cheese
Black pepper
Oregano
Olive oil

This dressing is especially good on spinach salad.
Serves 3-4
6 cloves garlic, whole
1/4 cup White wine vinegar
1 ounce Feta cheese
1/8 teaspoon Black pepper
1 teaspoon Oregano
3/4 cup Olive oil
Place the garlic in a small oven-ready pan. Cover with water and bake at 375 until soft (about 1 hour). Remove the garlic from its skin and add to the bowl of a food processor. Add the vinegar, feta, pepper, and oregano. Run the processor until smooth. S-L-O-W-L-Y add the olive oil with the processor running. Use immediately or refrigerate.
